SABUDANA/PEARL SAGO KHICHDI

In INDIA many people keep fasting on the holy occasions like NAVRATRA etc.I also believe in fasting. I keep fasting on every Thursday and in NAVRATRA. On these days people eat only fruits and vegetables. Sabudana/ Pearl Sago is also a kind of fruit but gives lot of energy. When I am on fasting, sometimes I prepare sabudana khichadi for myself with various types of vegetables and sindhav salt, which is allowed to have in fasting day. If you do not intend to prepare this dish for fasting then normal salt is also fine.
This khichdi is very tasty and healthy. Especially for new mom who feeds her baby. Sabudana is a very energetic food.
INGREDIENTS:-

1 cup sabudana(soaked in 2 cup water for 3-4 hr)

Salt to taste
-
1 spoon lime juice
-
1 spoon chopped tomato
-
1 spoon chopped coriander
-
1 spoon chopped French beans
-
1 spoon green peas
-
2 spoon grated carrot
-
2 spoon chopped cauliflower
-
½ Tspoon chopped ginger
-
1 teaspoon mustard seeds
-
1-2 green chili sliced
-
1-2 spoon olive oil or Ghee
-
pinch of turmeric
Soak the sabudana in water for 3-4 hr. Drain in colander and place the sabudana in plate on a paper towel to soak excess water.
Heat a flat pan on stove with oil and add mustard seeds, green chili, chopped ginger and saute it for 1 min. Add all chopped vegetables except coriander leaves and stir regularly for 3-5 min. Now, add salt and pinch of turmeric and saute it for another 3-4 min. Reduce the heat and add soaked sabudana in the pan and keep stirring frequently for 4-5 min on low heat until it becomes translucent. Remove the pan and and sprinkle chopped coriander leaves and lime juice. It is ready to serve now.

Sago/Sabudana is not a fruit, it is prepared from tapioca/cassava root. The root is processed to form the bead like product called sago. It high in starch content.
